Lemon Poppyseed Muffin-min

Yield:

4 Jumbo Muffins

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Crack eggs and whisk until consistent. 
  3. Add butter, lemon extract, seltzer and stevia glycerite; whisk until consistent.
  4. Add almond flour, coconut flour, stevia, baking soda and salt, whisk until smooth. 
  5. Add poppy seeds to mixture and use spoons to mix them in. 
  6. Spoon batter into jumbo muffin tins. 
  7. Bake for 35 minutes until tops are golden brown.
